Given Eson’s high cost, you'll need ramp cards like Electro, Wave, and Luna Snow to play him earlier and maximize his impact. The only direct counter to Eson is filling your opponent’s hand with unwanted cards, such as rocks or Sentinels from Master Mold, as Gorgon won’t affect him.
